Theo explains: “One of my first fine-dining restaurant experiences occurred at the Kiste restaurant in Trier when I was about 10 years old. I remember trying French Onion Soup, Princess Potatoes and Sauce Bordelaise for the first time. It turned out my aunt knew the original owners of the Kiste. When the restaurant got refurbished in the 1990s, they stored their stained glass windows in the basement. During my visit to Germany in 2004, I went to visit them and ended up purchasing one of the windows and had it shipped to our restaurant. It always gives me pleasure and reminds me of how great fine-dining experiences can make you feel. Enrich your life.”
